Carrot cake recipe

1 packet Super moist Betty Crocker white or vanilla cake mix.

2 cups grated carrot
1 cup roughly chopped walnuts
1 tsp cinnamon
1 handful chopped raisins
Water
Cooking oil
2 eggs

For the icing:

3 cubes of Kraft unsalted cream cheese
1 cup icing sugar or powdered sugar

Mix carrot,walnuts, raisins, eggs, cinnamon and beat well.Then add required quantity of oil( as per instructions in cake mix ) and a little less water than instructed.Beat well and add the cake mix and beat ..If beating by hand, beat for 3 minutes...

Then pre heat oven at 170c for 10 mins. Put a parchment paper in the cake tray and beat once again and then pour the batter in the tray.I initially baked for 25 minutes then checked with a toothpick and then baked for another 10 minutes..

Cool the cake on a cooling rack and do the icing.

I made a thin and transparent icing using unsalted cream cheese and powdered sugar..
