Avocado Walnut pesto
I have seen
many pesto recipes, but never wanted to try any since a long time.
So here
while I was thinking about a sauce for the pasta, I decided I need to try the
pesto.
Ingredients: makes 1 cup pesto
Avocado:
half medium sized avocado (Used the other half for milkshake)
Walnuts: 6
nos.
Basil
leaves chopped: 10 no’s.
Garlic: 2
cloves
Green chilly:
2 nos.
Lemon zest:
1 tsp
Salt: as
required
Pepper: to
taste
Water 2-3 tbsp.
Olive oil: 2 tsp
Method:
Grind
everything except salt, olive oil and pepper to a smooth creamy paste. If you
like the nutty texture, you can reserve few of the walnuts and chop it and add
to the blended pesto.
Now transfer
the pesto to a jar, add salt, pepper and olive oil and mix.
You can use
right away with cooked pasta .Also can store in refrigerator for 2 days.
Pesto can
be used with pasta, zoodles -zuchinni noodles.
It can be
used in sandwiches and also as a dip for baked veggies and chips.
