Easy Eggless pancakes with tips for variations
Pancakes
Pancakes are excellent
breakfast or even dessert option for the sweet tooth.
Making fluffy
pancakes is just a small recipe away. We
will go about the different variations
in the same recipe.
Basic Recipe for fluffy eggless pancakes:
Self Raising flour : 1 cup
Salt : 1/2 tsp
Sugar : 1 tbsp
Milk : 3/4 cup
Oil : 1 tbsp
Vanilla essence : 1 tsp
Salt : 1/2 tsp
Sugar : 1 tbsp
Milk : 3/4 cup
Oil : 1 tbsp
Vanilla essence : 1 tsp
Tip:
If self raising flour is not available. Replace with same measure of All purpose flour and a tbsp of Baking powder.
Method:
Mix all dry
ingredients. Then add all wet ingredients .Mix thoroughly without any
lumps. If the batter seems to be thick, add a little more milk to lighten it.
Heat a pan or a dosa
tava. When its really hot , just switch off the stove and let it to cool.
Reheat the pan. Add
some butter , and pour a big ladle of batter
on the stove.
Cover with a lid and
cook for 2 minutes. When the top surface is cooked, use a toothpick to check if the pancake is cooked
entirely .
Then take the pancake
from the pan and repeat the same steps for more pancakes.
Variation 1: Egg pancakes.
Please add 1 egg for 1.5
cups flour.Make the batter and continue.
Variation 2 : Chocolate/Nutella stuffed Pancakes.
Pour a thin pancake,
then add some chocolate chips/Nutella on
the pancake and cover the pancakes with more batter.
Variation 3: Carrot Pancakes
Add ½ cup some grated
carrots , 1 tsp cinnamon , ¼ cup chopped walnuts to batter and make pancakes.
Variation 4 : Apple Pancakes
Add ½ cup some grated apple
, 1 tsp cinnamon to batter and make pancakes.
Variation 5: Banana Pancakes
Add 1 big mashed
overripe bananas to the batter.
Variation 6: Red Velvet Pancakes
Variation 7: Whole Wheat Pancakes.
You can replace a part or full of the All purpose flour with Whole wheat flour or other millet flour like Ragi flour (finger millet ) , oats flour.
Serving instructions:
Serve pancakes with vanilla syrup or Maple syrup, fruits, cream
cheese, fruit jam.
Recipe for Vanilla syrup below.
Make a sugar syrup
with 1 cup sugar and ½ cup water. Boil sugar and water together till the sugar
melts and the syrup thickens. Add 3-4 drops of vanilla essence. Any fruit jam
that is not solid by nature but soft can be added to the syrup to add some flavor.
I add some fig jam to the syrup.
