Ragi Roti
Ragi /Akki Roti
Ragi Roti is a traditional breakfast in Karnataka, India.
Akki Roti (meaning Rice Flatbread) and Ragi Roti (meaning Finger Millet Flatbread) are both same recipe except the main flour used differs.
Being brought up in Bangalore , I have tried and tasted this food at many places and also with many side dishes .I love this soft yet crispy flatbread , that tastes yumm. My Amma makes these at home.
I make these flatbreads atleast twice a month.The version I make , has equal quantities of both the flours.
Ingredients:
Rice Flour : 1 cup
Ragi /Finger millet flour : 1 cup
Salt : 1 tsp
Onion : 1/2 cup finely chopped
Green chillies : 2 finely chopped
Carrot : 1/4 cup grated carrot
Coriander : 2 tsp finely chopped
Oil : 5 tsp
Water : 1 cup + extra
Optional:
Moringa leaves /Dill Leaves : 1/2 cupYou can make the dish with either of the flours according to the traditional method.
Method:
Add all dry ingredients to a mixing bowl.Add rest of the ingredients except Oil and water to the mixing bowl and give a stir.
Boil the water and pour it into the bowl, slowly mix it with a spoon to combine all together.When it cools a bit, use your hand to make a semi wet dough.
This dough is not like roti/bread dough, it will be a bit wet.
Then Heat a pan/dosa tava and brush some oil. Take a big ball size dough and flatten it on the hot tava.
Use a small Cup of water to wet your fingers while flattening the dough on the pan.Water helps if the dough is sticky and also if the pan is hot ,to cool your fingers .
Cook for 1 minute on medium heat . Then Flip the bread and cook on the other side.
Similarly make many more breads.
Serve the flatbreads with butter, coconut chutney, tomato pickle or any pickle of your choice.
