KARNATAKA STYLE VEG PULAO


Every Friday is a Pulao or biryani day at home.

Hence am always trying different variations of pulao and biryani.

This is 1 such recipe where a ground masala is added.

Ingredients:


Basmati or any long grain rice : 2 cups
Clove : 5 nos.
Cinnamon : 2 no. (1 inch stick)
Cardamon : 2 nos.
Bay leaves : 4 nos.
Mace(javathiri) :  1 no.
Star Anise : 1 no
Salt : as required
Water : 4 cups 
Onion: 1 big sliced lengthwise
Vegetables : ( Potato, green peas, cauliflower, green beans, carrots  ) big pieces  1 medium size cup
Oil : 2 tbsp.
Ghee : 1 tbsp

To Grind:

Yoghurt : 3 tbsp.
Coconut :  2 tbsp.
Mint leaves : 1 tightly packed handful
Coriander leaves : 1 tightly packed handful
Ginger : 1 inch piece
Garlic : 4-5 cloves
Green chilli : 4 nos.
Water : 1/4 cup

Method:

Grind all items  above (under to grind) to a smooth paste and keep ready.
Soak Basmati rice just  before switching on the gas .
Switch on the gas ,Add Oil to heavy bottom pan.
Then add ghee to it.
Add all the garam masala and fry.
Add onions and pinch of salt and fry well.
Add the ground masala and veggies, fry well.

When the raw smell of the ginger garlic is gone, add  4 cups water  and wait till it boils.
Add enough salt to the water and add the soaked basmati rice  and mix .

Cook for 10 mins.
Cooking time may vary depending on the vessel used for cooking.

Suggestions:
1. You can add any veggies of your choice  like brocolli,corn,mushroom.
2.  You can replace oil with ghee.
