VEG KATHI ROLLS
Kathi Rolls are usually a big hit and is a
easy grab and go food you can eat
with no mess around.
It is similar to the middle eastern Shawarma or Subway
Sandwich. Since it is rolled, there is no way the fillings are going to fallout
and makes eating it easy.
Generally Kathi rolls are made from Maida (all purpose
flour) bread.
But when I decided to
make this at home, I made it using wheat flour chapatis to make it healthier.
Lets see the ingredients and the method of making it.
Ingredients:
Servings : 5 Kathi rolls
Chapatis : 5 nos.
For Raw salad:
Carrots ½ cup : cut into juliennes (long sticks)
Cabbage ½ cup : cut into juliennes (long sticks)
Onions ½ cup : thinly sliced
Beetroot ½ cup : cut into juliennes (long sticks)
Salt: ½ tsp
Cumin powder ½ tsp
For Green Chutney:
Coriander : ½ cup
Mint :1/4 cup
Green chilli : 2 nos.
Yoghurt : ½ cup
Salt: ¼ tsp
Cumin powder : ¼ tsp
For filling:
Paneer /Cottage cheese : 1 cup
Yoghurt: 2 tsp
Ginger garlic paste : 1 tsp
Salt: ½ tsp
Chilli powder:1/2 tsp
Garam masala : ½ tsp
Cumin powder: ¼ tsp
Corn flour ½ tsp (optional)
Turmeric ¼ tsp
Oil: for shallow
frying
Method:
Though the preparation method is easy, this has few elements
to be made ready and all of them assembled together on the dining table as you
start serving the kathi rolls.
The first element to be made is the paneer stuffing. We can use babycorn,
cauliflower, broccoli all partially boiled too. For Non vegetarians, you can use
chicken or fish fillets.
Add all ingredients for the filling in a bowl and mix well. Marinate in the refrigerator for minimum of half hour
.
Then shallow fry the paneer pieces till golden brown in a pan with very less oil.
If you are using Cauliflower or Brocolli you can bake it too in the oven till crisp.
Our Next element is the green chutney .
Add all ingredients for the chutney except yoghurt in a blender,
and give it a good grind in the blender. Add 2 tsp yoghurt and grind them
further. Finally add rest of the yoghurt and mix all well.
The third element is the raw salad.
Mix all ingredients for the salad in a bowl and keep it
ready.
Final and last element is the chapati. Knead the dough for
the chapati and make ahead enough chapatis
and keep them in a casserole so that they remain soft till served.
Assembling the kathi roll:
- Spread some green chutney on the chapatti.
- Sprinkle some cumin powder and salt.
- Roll the chapathi tightly and pack it using paper towel.
The kathi roll is ready to be served. Serve it with ketchup
and green chutney.
Repeat the same steps to make more kathi rolls.
Any leftover filling and salad can be used
to make a tasty salad for the next meal. Also green chutney can be used
as a spread for sandwiches and as a dressing for the salad.
Hence all leftovers used efficiently and interestingly.
