Millet Cutlets / Sprouts cutlet


Generally , cutlets are deepfried.But this version is shallow fried in a tava/pan with few teaspoons of oil. You can add more veggies, more spices  if you wish.

 


Ingredients: ( to  make 12 cutlets)


Millets                          : ½  cup

Green gram sprouts   : ½ cup

Potato                          :1 big no.     

Salt                               : 1 tsp.

Chilly powder             :1 tsp.

Garam Masala           : ½ tsp.

Turmeric powder     : ½ tsp.

Oil                                : ½ cup

Semolina/Rava          : ½ cup

Rice flour                   : ½ cup

 

Method:


Boil potato till its mashable.

Wash  and  Pressure cook  the millets for 2 whistles in a pressure cooker.

You can use  quinoa/Kodo millet/Barnyard millet/Foxtail/Proso/Little millet   or even a mix of these millets.

Green gram  need to be washed and soaked in water for 1 full  day. Next day remove excess water and  sprinkle some water and keep it  for a whole day. The sprouts will be ready after 2 days .Store the sprouts in fridge. You can use the sprouts  in many ways –Salads/Curries/Snacks.

Add millets, potato, Green Gram sprouts , spices  to a mixing bowl and mix well.

Shape patties and keep aside.

In another bowl, take semolina  and rice flour  and mix well.

Roll the patties in the semolina and rice flour  mixture  and  pan fry in a greased and heated  tava/pan .Add few drops of oil  and fry till golden on both sides.

Serve as evening snack with a drink.

I used leftover cutlets in sandwich for breakfast.
